Spiralized Quick Pickles

I love having these pickles in my refrigerator for sandwiches or a little snack on their own. They don’t keep as long as regular pickles you’d buy at the store, which tend to be full of preservatives, but I never find that to be a problem because we eat them so fast! My husband doesn’t even like pickles that much but can’t resist these homemade ones, especially on top of a homemade burger.

Prep time: 10 minutes

Cook time: 10 minutes

½ cup red wine vinegar

½ cup water

¼ cup honey

1 tablespoon black peppercorns

1 tablespoon mustard seeds

2 large cucumbers, spiralized

  1. In a small saucepan over high heat, combine the vinegar, water, honey, peppercorns, and mustard seeds. Bring to a boil.
  2. While the brine boils, pack the cucumber noodles into clean jars. Remove the brine from the heat and carefully pour it over the cucumbers. Allow the pickles to come to room temperature, then cover and refrigerate for at least 2 hours or up to 10 days.

HEALTHY FOOD RECIPES. TIP: Make this a vegan recipe by skipping the honey. Use sugar or a little agave nectar instead. Be sure to taste the brine when making substitutions to make sure it isn’t too sweet.

Baked Cinnamon Apple Chips

When fall rolls around every year I get so excited to bake apples and pumpkins and all kinds of festive, autumn-inspired treats. These quick-baked apple chips are perfect as a snack or treat, and this recipe comes in handy if you’re like us and occasionally go apple picking but then end up with way too much fruit and not enough apple recipes.

Prep time: 5 minutes

Cook time: 25 minutes

2 or 3 apples, cored and spiralized

1 tablespoon grass-fed butter, melted

Ground cinnamon, for sprinkling

  1. Preheat the oven to 325°F.
  2. Trim the spiralized apples into 1- to 2-inch pieces, and spread them out on a large baking sheet in a single layer.
  3. Drizzle the melted butter over the apples, and sprinkle them with cinnamon. Toss gently with your hands to combine, then spread them back out again.
  4. Bake for 20 to 25 minutes, or until the apples have dried out slightly.
  5. Remove from the oven, allow to cool, and serve.

HEALTHY FOOD RECIPES. TIP: Use coconut oil instead of butter to make this recipe vegan.

Spiralized Fruit Salad

I love this simple fruit salad because it incorporates some fruit noodles, which are so fun! It’s a delicious combination of cantaloupe and apple noodles with fresh berries, lemon juice, and a little chopped mint for extra brightness. Bring this to your next summer potluck and impress everyone with a new take on a classic.

Prep time: 10 minutes

1 spiralized cantaloupe (peel cantaloupe and spiralize whole until seeds show, then scoop them out and continue spiralizing)

2 or 3 apples, spiralized

1 cup raspberries

1 cup blackberries

2 tablespoons freshly squeezed lemon juice

½ cup chopped fresh mint

In a large bowl, combine the cantaloupe, apples, raspberries, blackberries, lemon juice, and mint. Toss gently. Serve right away or refrigerate until ready to serve, up to 2 days.

HEALTHY FOOD RECIPES. TIP: Add some chopped nuts to this salad for an extra boost of fat and crunch factor.
