1 Can of Organic pumpkin puree -2 Tbsp (save that for a later use you’ll find out more about)

1 C unsweetened almond or coconut milk or organic half/half

1 Can 5.46oz Coconut Cream

1 Tbsp Stevia powder or 1/4C Maple Syrup

1 tsp Pumpkin Spice (I prefer Trader Joe’s Brand)

1 tsp organic vanilla a extract

Organic VERY strong brewed coffee of choice!Optional- Whipped cream or whipped coconut cream to garnish Get out a cast iron saucepan (or just a saucepan, but everything I own is cast so….). Anyway, Put the pumpkin -2 Tbsp in the pan on med-low heat with the pumpkin spice. Cook, stirring about 2-3 minutes. The pumpkin will change color and get darker. Take off the heat, pour into a bowl or bowl of stand mixer. Add in the sweetener, milk, and coconut cream. Whip on high with a hand mixer or your stand mixer for about 30 seconds. Taste, add more spice if you like. This makes about 8-12 servings of PSL’s!

So pour about 1/4 C of your pumpkin mix into a blender, add 8 oz of coffee, blend on high 10-5 seconds. Pour into a mug- enjoy a vitamin-packed GOOD FOR YOU PSL!!! Store left over pumpkin mix in a jar for up to a week, but it won’t last that long!

Gut Healthy + Easily Adapted to Low Carb

1 C organic sprouted wheat flour OR organic unbleached flour (sprouted flour works well for a low-carb diet)

2 Tbsp honey OR 1 scant Tbsp raw unbleached sugar

1 tsp baking soda

1/4 tsp salt

1/4 C organic cultured sour cream (Horizon brand)

1/2 C unsweetened coconut milk

1 large egg

1/4 C organic pumpkin puree

1 tsp pumpkin spice (Trader Joe’s brand is THE BEST)

2 Tbsp Kerrygold butter, melted + more for cooking

Crown Whiskey Barrel organic maple syrup or Lakanto Monkfruit maple flavor syrup (keto/low sugar). Melt the 2 Tbsp of butter in a large skillet. Meanwhile, mix dry ingredients together. Add egg + wet ingredients, mix well. Add the melted butter from the skillet, mix well. Using a soup ladle or scoop, make 3 pancakes at a time in the skillet. They will be ready to flip when they begin to get little air holes along the sides and top. After each batch of pancakes is cooked perfectly, add a little pat of butter to your skillet, then ladle in more batter.

This makes about 12 pancakes which (should) serve 4 people, but if you’ve ever read Little Black Sambo or you have a bunch of pancake fiends like my house, you will want to double the recipe! My grandpa used to layer a thin little slice of butter, and a little pour of syrup under each of my pancakes, then top with a little more butter and syrup over the top. This is the ONLY way to eat them.
