Zucchini Recipes. Ingredients:

  • ½ small zucchini (60 g / 2 oz.)
  • 1 sprig Italian parsley
  • 1 slice smoked turkey breast (20 g / ¾ oz.)
  • 1 egg
  • 1 Tbsp. milk (1.5% fat)
  • Salt
  • Pepper
  • 1 Tbsp. rapeseed oil
  • 1 whole-grain roll
  • 1 Tbsp. quark (curd) with herbs
  • 1 lettuce leaf
  • 1 small tomato (40 g / 1.5 oz.)

Preparation:

1.Coarsely grate the zucchini. Wash parsley and shake dry, then pull leaves off the stem and finely chop. Cut the turkey breast into narrow strips. Use a fork to blend egg, milk, a little salt, and pepper in a bowl. Add grated zucchini, parsley, and turkey strips.

2.Heat rapeseed oil in a small skillet and pour in egg mixture. Allow egg mixture to set at low heat for approximately 3 minutes. Flip the omelet and allow the other side to set.

3.Meanwhile, slice the wholegrain roll in half and spread with the quark (curd). Wash the lettuce leaf, shake off water, and place on the bottom half of the roll. Top with the omelet and tuck the edges under or fold the omelet in half.

Zucchini Recipes. Ingredients:

  • 100 g (3.5 oz.) tofu
  • 1 tsp. honey
  • 3 tsp. soy sauce
  • ½ bell pepper (medium)
  • 75 g (3 oz.) broccoli/zucchini
  • ½ leek
  • 1 Tbsp. rapeseed oil
  • ½ garlic clove
  • 1 dash of lime juice
  • Salt
  • Pepper

Preparation:

1.Cut tofu into cubes. Blend honey and soy sauce, add tofu, and let marinate for one hour.

2.Blanch broccoli in salt water, dice the bell pepper, and cut the leek into thin slices. Drain tofu and set marinade aside in a bowl.

3.Put oil in a wok and cook tofu until crispy. Remove tofu from wok and keep warm.

4.Place vegetables in the wok and cook approximately 5 minutes until al dente, then add garlic.

5.Add the remaining marinade and the tofu, season with salt and pepper to taste, and add the lime juice.

Zucchini Recipes. Ingredients:

  • 150 g (5 oz.) chicken breast fillet
  • ½ Tbsp. olive oil
  • 1 tsp. paprika
  • 65 ml (2 oz.) vegetable broth
  • ¼ medium onion
  • ½ garlic clove
  • ½ red pepper (or 1 red and 1 yellow)
  • 38 g (1.3 oz.) zucchini
  • 25 g (1 oz.) carrots
  • 50 g (2 oz.) mushrooms
  • 50 g (2 oz.) sour cream
  • ¼ glass dry red wine (eliminate for children)
  • Fresh basil
  • 1½ sprigs of thyme
  • Italian-style herbs to taste
  • Dried chilies to taste
  • Salt and pepper to taste
  • Rosemary (fresh or dried) to taste

Preparation:

1.Cut chicken into cubes. Wash vegetables and cube or cut into bite-size pieces. Finely chop garlic and onion. Cut zucchini into thin slices.

2.Heat olive oil in a wok and sear chicken with a little rosemary and paprika powder until crispy. Remove chicken and set aside.
